Healthy Salads For The Holidays
One of my colleagues, health and wellness mentors, and friends Brianne Showman Brown posted recipes for two healthy salads the other day. I wanted to share them for my Foodie Friday Blog post because I am always looking for healthy but tasty alternative recipes. This has been a really hard transformation for me who had always loved and lived on junk food. But I know I have to use real, healthy food as fuel for my body, so I am genuinely trying to do the right thing. I am so thankful for Brianne’s GET YOUR FIX NUTRITION site and posts. ONE THING I LEARNED TODAY:
I learned I have no idea what Jicama is. Apparently it’s a wonderfully juicy, sweet, and nutty tuber with a distinct crunch. It is most commonly enjoyed raw, but you can cook jicama, too. Its white flesh stays crisp when cooked briefly. Recently I heard jicama described perfectly as a savory apple. I used to make salads like this often, but with pasta and macaroni. This year I used more cauliflower than ever before in my life. I foresee a good amount of Jicama being used in the near future as well. You can still enjoy many of the sides and salads you have always enjoyed in your lifetime, but try substituting some healthier options like jicama or cauliflower. For every three times you make healthy substitutions, you kind of gain a free pass to try the original, actual recipe as called for (aka pasta or macaroni). Just think if you were to do this over the course of an entire year how much better your body would feel.
